Characteristics and Properties 
1. HPMC food additive is widely applied in food industry. In daily drinks and seasonings, it functions as a thickening agent, stabilizer, or taste modifier.

2. In addition, the food grade hydroxypropyl methylcellulose can be applied in ice cream, bread, cakes, biscuits, instant noodles, and quick paste food. It can not only shape product and improve flavor, but also retain water and enhance strength. This product has high degree of substitution, providing good stability and thickening properties.

HPMC offers high viscosity at low concentration. It also functions as a lubricant.

2. Water-Holding 
As a kind of water glue, it is conducive to the improvement of shelf life of food.

3. Film-Forming 
The water glue can produce a film on the surface of fried food, instant noodles, or the vegetable oil that can avoid excessive absorption.
